Recipe: Mediterrenean chicken wraps

With autumn coming on fast, I thought it only appropriate to include one last recipe for those lazy, summer days.  Those days when the only thing I could master was to open the fridge, look what was inside and try to make do with what I had to compose an easy, fast, summery dish that would be just perfect!
One, of course, can never go wrong with a wrap - the quintessential summer eat.  I use wraps with all types of ingredients and I couldn't be happier that I can satisfy my taste buds within minutes:


Meditterenean chicken wraps
adapted from Emily bites


50g roast chicken, shredded
20g feta, crumbled
1 medium tomato, in cubes
1tbsp olive pate (either black or green)
1 flour tortilla
oregano




Over high heat, quickly warm the tortilla from both sides.  Spread the olive pate on tortilla.  Add chicken, feta, oregano and tomato (the olive pate is rather salty, so I've not added any extra salt).  Fold the ends of the tortilla and then roll sides over.  That's it!  Enjoy!

  2. Wraps are indeed a wonderful idea for any meal :) Any season of the year, actually :D I wish my bf would like olives more, then I'd slather our wraps with the stuff... yum!

  8. Wrapping in a lettuce leaf instead of tortilla would make this recipe legal on my diet. The olive paste makes a flavorful addition.

    1. Lettuce is a great alternative indeed (although I would then need to eat 2...). I use olive paste almost everywhere - today I made a pasta tuna sauce with it, turned out exquisite!
