Recipe - cheese and olive cake

What do you get to a potluck gathering when you're not sure whether there will be vegetarians in the party?  Simple answer:  my cheese and olive cake - such a delicious, simple cake that will appeal to vegetarians as well as the non-vegetarians.  As an added bonus, it will also provide a solution to having a snack any time during the day!






Cheese and olive cake

175g grated cheese
150g green olives, sliced
5 eggs
50ml olive oil
100g Greek yogurt
300g all-purpose flour
1 tsp baking powder
1 tsp dried thyme, pinch of safran
salt/pepper to your taste



Preheat the oven at 200 degrees C (180 in fan oven).   Mix flour, baking powder and thyme. Beat eggs with oil, yogurt, safran, salt/pepper. Add the flour mixture, the grated cheese and the olives.  The final mixture should still be fluid.

Oil-spray a cake tin and pour the mixture in.  Bake for about 20'.  Reduce heat to 180 degrees and continue baking for another 50'.  Leave to cool in the tin for about 5', then take out and leave to cool completely.  Trust me, this is a keeper!

  5. A good number of vegetarians in my extended family, but not sure how they feel about green olives. If they were ever going to like them, though, I imagine it would be cooked in this way. Looks delicious!

  12. I usually take hummus or a quinoa dish. This sounds perfect for my son. Looking forward to making it for him. Too much dairy for me, but the green olives are very appealing.
