Cooking: Baby shower

Potluck dinners are the type of gatherings I love to go to, one, because they highlight the convivial spirit and two, because they give me a good excuse to cook up something new and exciting!  When my friend Jessi gathered us all girls around for a baby shower I went to my trusted Pinterest trying to find some new recipes. Here's what I came up with...

Cherry and yogurt muffins
(adapted from Kneadtocook)

3/4 cup of yogurt

1/3 cup of golden syrup
1/4 cup of brown sugar 
3 eggs 
1 teaspoon of vanilla paste
1.5 cups of all-purpose flour 
2 teaspoons of baking powder 
1/4 teaspoon salt
1/2 cup of rhubarb jam
1 jar of pitted cherries (about 350g)
1/4 cup of slivered almonds


It's all done in one go!
Start by preheating the oven at 180 degrees C (fan).
In a mixer, start with yogurt, syrup, sugar, eggs and vanilla paste (or extract, if you prefer).  After a first whizz, add flour, baking powder, salt and whizz again.  (Just make sure that all ingredients are well mixed with one another).  Add jam and whizz for the last time.
Fold the cheries in the mixture with a spatula.

Line a muffin tray with paper cases and ladle the mixture in each of these.  The mixture is still fairly liquid, so be careful!
Sprinkle the slivered almonds on top and bake for about 20 minutes.  I then turned the oven off and let the muffins cool off inside.

Apart from these little darlings, I also knitted a cute baby blanket for Jessi!   I went for a trusted colour:  green!  Groovy green to be exact, it came along very nicely, and it's sooo soft!  (click here for more details).

  2. These look divine! I love trying new recipes and Pinterest is addictive. I think I have far more recipes than I could ever actually make but I keep pinning!
