Recipe: coconut macaroons



Yes, it is the season of over-eating, yet I do want to make an effort to have (semi) healthy alternatives on the menu.  This is where these adorable macaroons come in handy!  I discovered coconut early in my life and what I like is its natural sweetness.  I always try to find new recipes to include coconut (savoury or sweet).  
So, with no further ado, here is the recipe:




 



Coconut macaroons



2 egg whites
100g sugar
1 tsp vanilla
250g coconut, shredded
2 tbsp flour
1/4 tsp salt


Preheat oven at 160 degrees C at fan. Line a baking sheet with parchment paper (I'm a recent addict to the reusable one).  In a bowl add all ingredients with the order written and mix well.  For forming, you can either drop a spoonful onto the baking sheet, or do as I did:  use an old-fashioned coffee measuring spoon (that looks like a cone) or make other whimsical forms - this is a fun recipe and it's up to you to show your creativity!  Bake for about 12 minutes until edges begin to brown.

  9. Your macaroons look so beautiful! Mine are usually quite a lot messier than that, but the taste is the only part that matters (at least, that's what I tell myself when I see a gooey cookie mess). Thanks for sharing!
